Why It’s True — The Proof

Cantina Tuscania was founded in 2015 after PARSEC acquired the Tuscania consortium. Originally focused on Sangiovese research, the winery quickly transitioned from experimentation to execution. By 2016, their own labels were already turning heads. Today, with 312 fermentation tanks in operation, the winery blends precision with vision — scaling quality without compromising authenticity.

At the moment, they are making micro batches of their Chianti Classico wines. Around 3,000 bottles but plan to grow the production while maintaining quality expectations.

While their early vintages explored over a dozen grape varieties, today Cantina Tuscania’s focus is sharply defined: 100% Sangiovese in all their Chianti wines, keeping them firmly in native territory, and a long-term commitment to resurrecting forgotten heritage grapes like Foglia Tonda and Pugnitello. These grapes — nearly extinct, remembered only by a handful of old producers — are being revived as fine wines and will soon be introduced to select markets in New York and New Jersey.

At the heart of their innovation is PARSEC’s proprietary winemaking technology. Unlike traditional systems that consume excessive energy and rely on brute-force intervention, PARSEC reduces environmental impact — using less energy and generating fewer emissions — while allowing full control over the winemaking process. It’s not surgery. It’s skilled guidance — enabling wines to evolve naturally without sacrificing purity or sustainability.

And yes, the wines are certified organic in Europe. They meet rigorous EU standards, including limited use of sulfites — only 92mg per liter, far below the 150–200mg/L typically found in mass-produced wines. Why sulfites at all? Because they protect the wine from bacterial spoilage and allow it to age gracefully, preserving the structure and evolution that defines a great Chianti.

However, due to differing standards, these wines can’t carry the USDA Organic label — not because they aren’t organic, but because the U.S. standard requires zero sulfites. Ironically, eliminating sulfites altogether would compromise the integrity and longevity of wines like these. So when you pour a glass of Cantina Tuscania’s Chianti, you’re tasting organic wine as it’s meant to be experienced — just like in Italy.
